Famous food of Rajasthan – Being one of the most exotic and royal places in India, Rajasthan is famous for its rajwadi cuisine. Rajasthani cuisine is influenced by the vegetables that grow in the water arid state, the hunting expeditions of the rich royal masses, lifestyle of local warriors and food preservatives like oils and chillies. You cannot afford to leave Rajasthan without trying these recipes-

01 Daal Bati Churma

This is the signature dish of the state of Rajasthan. Bati is hard bread which requires minimum amount of water for preparation. It can be preserved for a long time. It is eaten with Dal or lentil curry. Churma is coarsely ground wheat mixture crushed in ghee , jaggery or sugar.

02 Laal Maans

Laal Maas means red meat. The dish got its name from its dark red colour. Traditionally the dish was prepared using a wild boar, rabbits and deer which were easy to spot on a hunting expedition. Presently it’s made predominantly with goat meat.

The dish is best cooked over coal oven. The meat is marinated in spices and cooked on low heat in a paste pf fiery red chillies, garlic paste, sliced onions and curds.

03 Aam Ki Launji

A raw mango pickle made with addition of fennel and nigella seeds is another Rajasthani signature. The best thing about Launji is it takes only a few minutes to make it. It can be served with any mean as a side dish and will add an extra edge to your entire meal.

04 Ghevar

A heavenly delight for all of you with a sweet tooth, ghevar is probably the best authentic Rajasthani dish. It is made from flour and soaked in ghee, milk, and garnished with dried fruits. There are other recipies where malai or cream is added to the ghevar making it even more delicious. Ghevar is primarily prepared during the festival of Teej. The Lakshmi Misthan Bhandar and the Rawat Misthan Bhandar in Jaipur are best places to have ghevar.

05 Pyaaz Kachori

Pyaaz ki Kachori is an authentic Jodhpuri dish which is primarily served as a snack. They are made of onions and spices like cumin, fennel, turmeric and chilly powder. It is served with coriander and mint chutney and date and tamarind chutney. Pyaaz ki Kachori is found at every street food shop and restaurants. They are also prepared quite regularly in the households.

06 Gatte Ki Sabzi

Gram flour dumplings aur gatte is steam and fried and made into a curry. This curry has a tangy gravy made up of tomatoes buttermilk and exotic spices. The speciality for this dish is that you don’t need any fresh vegetables which is a kind of scarcity in the water at state of Rajasthan. It is best served with rotis (Indian flat bread) and white rice.

07 Mohan Maans

This is another meat recipe where meat is cooked with thick creamy milk and aromatic spices. The meat is stuffed with dry fruits. Cardamom and lemon is added in the garnish to make it even more lip smacking.

08 Ker Sangri

Another popular authentic dish of Rajasthan is the Ker Sangri. Ker is a tangy wild berry while Sangri is a long bean which grows abundantly in the dessert. 10 Raab

A soup like dish made with millet or bajra with buttermilk. This mixture is heated and fermented in a earthen pot. It is then simmered until fully cooked. Ginger juice, jaggery and ghee is then added to it. The dish is not only tasty but also enriched with nutrients.
